Never peel a hard boiled egg again!!! okay two methods here. Have yet to try them - the blowing it out seems unsanitary unless I am eating it myself - not for family potato salad or deviled eggs for sure. tried soda in the water while they were boiling and it changed the texture of the egg to unusable. That said - I will try this and see.
Make Better Hard-Boiled Eggs By Baking Them in The Oven, Not Boiling Them
Who knew?! Alton Brown Method of Hard-Cooking Eggs - 325 degrees for 30 minutes. Post says "Baked eggs are better because they are less sulfurous (smelly) and the texture of the finished eggs is creamier." ------- Well...I have never enjoyed traditional hardboiled eggs, so maybe this will make them better?
