Avocado chicken parmigiana-Mmmm. I was not expecting this to be so easy, but it was very simple and so fast! It turned out great and everyone loved it. We used some homemade pizza sauce leftover from another night. The avocado was perfectly creamy and added such a welcoming contrast to the crisp and moist chicken. We ate this with a salad, but I am sure with pasta it would be great too.
Skinny Chicken Parmesan This is a great recipe - BUT - what makes it even better is substituting the bread crumbs for crushed up corn flakes cereal! When you coat the chicken with the cereal and bake it the end result is what tastes and looks like fried chicken!! Only so much healthier!
