    Twice Baked Cauliflower :: I "riced" my cauli instead of boiling it, added extra salt and pepper, and topped our portions with a bit of extra sour cream and a dab of butter. We loved it and will certainly make this again! Great side dish for low-carbers!

Easy Garlic and Lemon Shrimp - When I saw cleaned, deveined shrimp on sale for 3.99 a lb, I knew it was Shrimp Night, and this was fabulous! Easy to convert to a South Beach Diet recipe, too.
