When cathrnb did a little too much indulging over the weekend, she started her Monday off with a healthy breakfast of "cottage cheese, avocado, cucumber, grape tomatoes, and cracked black pepper."

One of my FAVORITE summer dishes! Tomato, cucumber, avocado salad. So colorful, flavorful and easy too !

Avacado, tomato, cucumber, and mozzarella salad with balsamic vinegar and whole seed mustard dressing. Balsamic vinegar mixed with wholeseed mustard. You can add a bit of honey and/or olive oil too.
