"An Easier Tomato Soup" - my favorite tomato soup recipe, on account of coconut milk and almost no chopping involved (you use an immersion blender). Got 28 pounds of tomatoes from bountiful baskets this week and have already made six batches of this soup recipe--my freezer will be full until summer! :o) Also makes a great "base" for other soups.
