8 oz Low-moisture whole-milk mozzarella cheese
2 oz Parmesan cheese, grated

Vegetable Lasagna by the Pioneer Woman. Callum loved this (as did I). I cheated and used a jar of pasta sauce instead of a can of tomatoes but I followed everything else (also replaced mushrooms with shredded kale because that's what I had in the fridge). Highly recommend. And really like the Pioneer Woman's blog.
