Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!

chicken and spinach flautas - This is one of my families favorite recipes! This one is for you Nikki :)

Baked Chicken and Spinach Flautas - Healthy. Delicious. These were fantastic. I only had guiness and I boiled 4 chicken breast in 3 cups water and two cans if guiness. I threw the spinach and jalapeño in with a cup of the liquid and then strained it. I threw all ingredients into the blender (2 chicken breasts with spices first, then the spinach/jalapeño, then added cheese until I felt there was enough in there). Ended up with a paste that spread nicely.

Baked Chicken and Spinach Flautas. they are decently healthy too for mexican food!
