I actually made this for dinner tonight. i used three chicken breasts instead of thighs because that's what I had. It was delicious. Only things I would change are: add more corn, add frozen bell peppers and I added about two cups of trader joe's roasted red pepper soup. Gonna use leftovers for tacos tomorrow night. Whole chicken in the crockpot. Super easy. Leave it in the crockpot all day and dinner is ready. Great eaten with a little BBQ. Easy to use in other recipes.
