Today's lunch is inspired by the wonderful @plantstrongvegan. Her salad rolls (and instagram!) always look so delicious, I had to try making these myself. I filled my rice wraps with baby spinach, carrot, cucumber, red bell pepper, green onion, smoked tofu and sesame seeds - paired with a spicy-sweet peanut sauce for dipping. This is such a fun way to eat lots of fresh veggies, I'm totally addicted! Thanks for the inspiration Margaret =)

Brigadeiro de Leite Ninho com Recheio de Nutella 1 lata de LEITE CONDENSADO 5 colheres de sopa (daquelas de mãe, bem cheias ;D) de LEITE NINHO 1 colher de sopa bem cheia de MANTEIGA SEM SAL 70 gramas de CHOCOLATE BRANCO em gotas (ou picados) 100 gramas de NUTELLA 1 pitada de SAL 1 colher de sopa de GLUCOSE ou MEL

rosemary roasted carrots    ingredients    2 bunches of small carrots (about 24), peeled  1 tbsp. olive oil  1 tbsp. minced rosemary  salt and pepper  instructions    Preheat oven to 400 degrees. Toss carrots with olive oil on a rimmed baking sheet. Sprinkle with rosemary, salt & pepper. Bake 20-25 minutes or until tender.
