Baked Apple Chips 2 large apples, cored (I used Red Delicious) 2 T. sugar (optional) 1 t. cinnamon canola oil spray Preheat oven to 200 degrees. Thinly slice apples crosswise about 1/8-inch (2 mm) thick with a mandoline or sharp knife.  Arrange apple slices in a single layer on two parchment-lined rimmed baking sheets, and spray with canola oil cooking spray. If using sugar, combine in a small bowl with cinnamon.  Put mixture into a sieve and sprinkle evenly over apple slices. Bake in the top and bottom third of the oven until apples are dry and crisp, about 2 hours (mine took a little longer than that to get crisp, but I didn't use sugar).  Remove from oven and let ‘chips’ cool completely before transferring to a sealed container for up to 3 days.  Makes about 2 cups of apple chips.

Crispy Baked Yellow Squash Chips. Oven at 225, bake for ~2 hours flipping after an hour. These are so yummy! I used a mandolin to cut them and it was a breeze to prep! Cut them 1/16" thick and only needed about 1.5 hours to cook. Might try 1/8" next time.

About a week ago I was trolling another one of my addictions--pinterest--when I came across a recipe for what looked like a YUMMY fruit salad. The blogger who had originally pinned it found it on www.allrecipes.com as one of their all-time highest ranked recipes. I thought this might be perfect for my fruit addicted child and maybe I could find a way to make the chips gluten free so Jim could enjoy too. So, I decided to make it this past weekend weekend-- my son gobbled it up, husband liked it, and I couldn't get enough of the chips. **A couple of notes** I opted to only put 1-1/2 TBSP of white sugar and leave out the brown sugar since I didn't want to make it too sweet or wind up with too much juice.  To make the chips gluten free, I tried using a few rice tortillas that we had here-- they turned out ok, but my husband ended up using gluten free crackers instead and liked it better.  I recommend  making and eating this in the same day otherwise the fruit gives off way too much juice and it gets runny/mushy.  picture courtesy of www.the-girl-who-ate-everything.com --because I forgot to take one! This dish has a double dose of lemon: Juice adds tartness, while zest contributes a softer, more floral flavor. 4 chicken breasts, 1 block of cream cheese, 2 cans of cream of chicken soup, and a packet of zesty Italian dressing mix. 4 hours until supper!"

Baked Eggplant: Peel and slice eggplant into thumb-thick slices, salt on both sides and let sit 1hr. Wash slices(squeezing gently). Dip slices in egg and panko(w/ salt & pepper). Homemade Zucchini Oven Chips These breaded, oven-fried zucchini chips taste like they’re fried, yet they are baked and amazingly crispy. These chips make a healthy substitute for French fries or potato chips. Ingredients: 1/4 cup dry breadcrumbs 1/4 cup (1 ounce) grated fresh Parmesan cheese 1/4 teaspoon seasoned salt 1/4 teaspoon garlic powder 1/8 teaspoon freshly ground black pepper 2 tablespoons fat-free milk 2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small) Cooking spray Directions: 1. Preheat oven to 425°. 2. Combine first 5 ingredients in a medium bowl, stirring with a whisk. 3. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. 4. *picture courtesy of cooking light i love zucchini but often run into a road block with its possibilities; it's such an easy, healthy side dish but i always end up making my tried & true go-to, {tuscan-style slice & dice zucchini}. while it is one of my favorites, i decided i needed to reinvent & reinvigorate my love of the zuc. so on a rainy monday night, i tried my hand at these "chips"! not only are they low in calories, they are the perfect alternative to greasy fries. and hey, if my husband loved them, i can guarantee kids will too! {baked zucchini chips} ingredients {in order of use} 1/4 cup italian breadcrumbs 1/4 cup shredded parmesan cheese 1/4 teaspoon garlic powder salt & pepper, to taste 1/4 cup low-fat milk 2 zucchinis, cut into thin medallions 1. pre-heat oven to 4oo degrees. 2. mix first 4 ingredients in a small bowl. pour milk into another bowl. 3. dip zucchini chips into milk & dredge through breadcrumb mixture. place on a greased wire rack coated with cooking spray; place rack on a baking sheet. 4. bake for 30 minutes or until brown & crisped. *optional-serve with ranch dipping sauce!
