Confetti Rice and Bean Salad

Vegan • Gluten free • Serves 6

Produce

1 (15-ounce) can Black beans
1/4 cup Cilantro, fresh
1 1/2 cups Corn, frozen
1 Garlic clove
4 Green onions
1 (15-ounce) can Kidney beans

Pasta & Grains

3 cups Rice, cooked

Baking & Spices

1/4 tsp Black pepper
1 tsp Chili powder
1 Red pepper
1 tsp Salt
1 tbsp Sugar

Oils & Vinegars

1/3 cup Olive oil, extra-virgin
1/4 cup Red wine vinegar

Nuts & Seeds

1 tsp Cumin, ground

Bean Salad - Had on July 4th, was quick to prepare and had great flavor!

Bean Salad- I will be making this recipe again. I made some changes. I used red kidney beans and then white kidney beans. I omitted the parsley and basil just because I didn't have it on hand at the time. I also used balsamic vinegar. It was a hit.
