Roasted Tomato & Rosemary Soup with Kale & Potatoes
Collard Chips #healthyaperture [This did not work for me at all.. I'm sure it was my fault though because I used a mix that I always use for my kale chips when I dehydrate them (acv, braggs liquid aminos, tahini & nutritional yeast). In the oven this just got soggy and gross. May try again and dehydrate them instead of putting them in the oven.]
Roasted Butternut Squash with Kale and Almond Pecan Parmesan- I omitted the nutritional yeast and parsley. I added Rosemary and Parmesean Cheese. I really just eye balled ingredients rather than stick to measurements. I thought it was FANTASTIC!
