    Cheddar and Bacon Pie Crust: 2 cups all-purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp kosher salt 6 TBS chilled unsalted cubed butter 1 cup buttermilk Filling: 2 lbs large tomatoes, cored, de-seeded slices 2 1/2 cups grated cheddar 1/4 cup Parmesan cheese 4 oz cream cheese 1/3 cup mayonnaise 1 scallion, diced 1/4 cup fresh basil, chopped 1 TBS white wine vinegar 3/4 tsp salt 1/2 tsp pepper 1 TBS cornmeal crispy bacon
