    Baba Ganoush. Without gas stove: Roast eggplants really close to the heat source, at highest setting for 10-15 in oven to get them charred. Then continue roasting at lower temperature for 25-30. Consider adding cumin and/or paprika for further depth of flavor.

Baba Ganoush-Bake halved eggplant at 400F 35 min. cool, scoop into blender with evoo, tahini, garlic, salt, cumin, lemon juice. garnish w parsley, oil, red chile powder. Very good source of dietary fiber, vitamin B1, and copper. Good source: manganese, vitamin B6, niacin, potassium, folate, and vitamin K. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid. Eggplant AND phytonutrients such as nasunin and chlorogenic acid. BUT nightshades bad for inflammation/arthritis:(

Baba Ghanoush I love, love baba ghanoush but have to be careful about making sure there is no eggplant skin in it because I'm allergic to it, you see.

!!!!HOMEMADE FALAFEL WITH TAHINI SAUCE--either half garlic/onions or (I used) double (2cans) chic peas and a pinch more cumin. Also needed to add a bit of water to tahini sauce. So delish. Sloan and Eleni loved. Served on naan bread with cucumber, toms, feta, and avocado. Delish.
