Pavlova is a meringue-based dessert named after the Russian ballet dancer Anna Pavlova. It is a meringue dessert with a crisp crust and soft, light inside. The name is pronounced /pvlov/ or /pvlov/, unlike the name of the dancer, which was /pvlv/. The dessert is believed to have been created in honour of the dancer either during or after one of her tours to Australia and New Zealand in the 1920s.
Cherry pavlova-Preheat oven to 175C.To make the meringue, whip egg whites to soft peaks,add sugar a little at a time until stiff peaks form. Fold down cornstarch till well blended.Use a plate to trace a circle on a baking paper, the circle with meringue.Make a small well in the middle for the filling.(cont)
