Enlightened Cooking: Vanilla-Cardamom Quinoa Pudding -- I made it without the sugar and with a little bit of agave syrup. It would have been great just a little bit sweeter, but otherwise, a great snack!
From Krista - parmesan spinach quinoa - LOVE! Very good but I would add a lot more spinach next time. I also tried this with kale, but I prefer spinach. You can also add veggies - I added grape tomatoes and zucchini!
