Spoonful: Perfect portion: chioggia beet and goat cheese tartlets

Chickpea carrot soup.

There's just something about carrots and cumin. They go so well together. Toss fresh baby carrots with olive oil, the juice and zest from a lime mixed with a teaspoon of honey, sea salt, cumin, coriander and smoked paprika. Roast for 20 mins at 400. Sprinkle with very thinly sliced green onions and chopped mint leaves before serving.
