Produce

1 Carrot
1 Garlic clove
1 Parsnip
2 Purple potatoes, small

Refrigerated

1 Egg white

Baking & Spices

1 tsp Baking powder
1/2 tsp Black pepper
1/2 cup Rice flour
1 1/2 tsp Salt
1 Salt and pepper

Oils & Vinegars

3 tbsp Vegetable oil

Dairy

1/2 cup Fontina cheese, grated
1/2 cup Sour cream

    Root vegetable fritters! Theyre so tasty, easy to make and the parsnip adds a hint of unexpected sweetness (in totally a good way) to the fritters! Theyre also a great inexpensive and super easy appetizer or side dish to any meal!

roasted roots; Edit 10/24: made this as a side to some pan-seared herbed chicken. We'd never had parsnips or turnips before, so it was an experiment, to be sure. Next time, I will leave out those two things (we weren't fans) and will instead use sweet potatoes and more carrots. I will probably cut back on the garlic, too, but really the fresh rosemary and thyme were perfect.
