This is my Mother's Day breakfast. I will eat mine with Carmel sauce and Carmel biscotti coffee... Yum! Ever had a Churro Waffle? Make a bowl of cinnamon and sugar, and just as soon as your waffles come out of the waffle iron (Let them get a little bit more done than you might normally - You want them to have a little bit of a crust) - then, you flip them over in that sugar until nicely coated. Let them sit for a minute, add butter and eat.

Parmesan Squash Bake potatoes, onions, squash, zucchini, tomatoes...sliced, topped with seasoning and parmesan cheese. 1/2-1 c. grated parmesan 1/4c. extra virgin olive oil, divided 2 cloves garlic, minced sea salt to taste- In a small pan, heat 1 T. oil. Fry the garlic for a minute or so. Slice veggies and Layer them into rows across in the dish. Pour the oil over evenly. Season. Bake 350 for 30 min, uncovered. Pour the parmesan over. Bake another 15-20 minutes til golden brown.
