Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!

Lidia's Italy: Recipes: Stuffed Rice Balls This will be at our next Italian Dinner with the group traveling to Italy in June. We do a monthly dinner to culturally immerse ourselves before going.
Bite sized Italian rice balls made with brown rice, spinach, chicken sausage and cheese, breaded and baked in the oven. Served with Marinara for dipping – so good!
A fave of Scoot and mine...Fried and Stuffed Rice Balls (Arancini di Riso)...great recipe, added frozen peas and will try sausage too next time
Arancini di Riso: "Rice Balls" (* leftover risotto, * mozzarella cheese cut into cubes, 1 egg (lightly beaten), 1/4 cup parmigiano reggiano (grated), 1 cup bread crumbs, vegetable oil for frying, and * leftover marinara sauce)
