Croissant sandwiches with pesto, rucola, figs and prosciutto. I use fig jam and spinach instead of figs and rucola (because it's easier/more available), and it's delicious. My fiancé loves it and it's super easy.
Emeril's Kicked-Up Tuna Melts Recipe. Made these last night and they were so tasty! Quick and cheap meal option. I made mine w/ white onion and smoked provolone. Not spicy (as I assume any Emeril's recipe would be). Not your average tuna melt!

Chipotle Sweet Potato, Black Bean, and Guac Tacos. Next time cut the sweet potatoes a little smaller - they took way longer than 20 minutes to cook. Maybe cut back on the adobo a bit (used peppers). Paired with guac recipe from Clean Eating.
