Caramelized Sweet Potato and Kale Fried Wild Rice | Iowa Girl Eats *next time I'd either roast or steam the sweet potato as I found it didn't really cook well by trying to saute it. I used a bit of maple syrup instead of butter & brown sugar. I cut back on the oil in the dressing too. Used both red & green kale. Really enjoyed this dish!!! It was so rich & flavourful! Just delicious.

Brie + Cheddar Apple Beer Soup with Cinnamon Pecan Oat Crumble **This was a really good soup!!! Somewhat time consuming, but worth it. Do not skip the crumble on top - it totally makes the soup!! It calls for a ton of cheese, which I cut back on the cheddar a little bit, but when I was eating I thought "this needs the extra cheese". Its not a weekly soup by any means, but a nice fall soup to have once a season! Its a big batch too - lots of leftovers as it is just my husband and I!

Zucchini Chips 2 med zucchini (about 1 lb) 1 T olive oil 1/4 c grated Parmesan 1/4 c dry bread crumbs 1/2 t salt Black pepper Directions - Preheat 450* F. Coat baking sheet with cooking spray. Slice zucchini into 1/8-inch thick rounds. Toss zucchini with oil. In a small bowl, combine Parmesan, bread crumbs, salt + pepper. Dip each round into the Parm mixture, coat evenly on both sides, press coating on to stick, place on baking sheet. Bake zucchini until browned + crisp, 25 to 30 min.
