Breaded Pork Chops. Need: 1 egg (lightly beaten), 1/2 C milk, 1 1/2 C crushed saltines, 6 (4 oz ea, 1" thick) boneless pork loin chops, & 1/4 C canola oil. / Mix egg & milk, dip ea chop in egg/milk mixture. Then thickly coat chop w/cracker crumbs. In large skillet, cook chops in oil for 4-5 min on each side or til thermometer reads 145˚. Let chops stand 5 min before serving.
* * * I love this recipe - simple and delicious! I use peanut oil, add chopped broccoli, julienned carrots, a little garlic and extra scallions - could add snap peas too! Chopped Chinese bbq pork is delicious, but a hoisin sauce marinated/cooked porkchop works too!
