Summer Squash Chips- 5 medium summer squash, 1/8" slices 1 tsp coarse salt 1 tsp fresh oregano Olive oil cooking spray Directions Preheat oven to 200°F. Coat 2 large baking sheets with cooking spray, and place squash in a single layer on sheets. Cover squash with cooking spray. Sprinkle salt and oregano on top. Roast for 1 hour and then rotate trays. Roast for 30-60 minutes more, until chips are crisp.
1 C potatoes, peeled and grated 1 egg ¼ C bread crumbs 3 T onion, chopped ½ C sharp cheddar cheese ½ tsp salt ¼ tsp pepper Preheat oven to 400*. Spray a mini muffin tin with non-stick spray.
