Thailand - Tender bamboo shoots are cut into segments and stuffed with a mixture of sticky rice, coconut milk, and red beans. The ends of the shoots are stopped up with hay, and then the shoots are left to cook in front of an open fire. As the shoots brown, the rice inside cooks up.
