    Easy Chicken Santa Fe | Recipe Girl Ingredients: 1 (15 oz) can black beans, rinsed & drained 1 small bag frozen sweet corn 1 c. bottled chunky salsa 6 skinless chicken thighs (or 6 skinless chicken breasts- see tips below) 1 (8 oz) package cream cheese, cut in chunks Cook first 4 ingredients in crockpot on HIGH for 3 hours. Shred chicken; return to crockpot. Stir in cream cheese and cook until melted. Serve over rice or use as taco filling adding toppings as you wish.
