Mix all together and bake for one hour at 325 degrees in preheated oven. I made this tonight and LOVE it. Easy and so delicious!!
THM - Chocolate Chip Coconut Cookie (like a muffin in a mug (MIM) but more cookie texture) - In a Coffee cup mix - 1 egg whipped, 1 TBS Almond Meal/Flour, 1 TBS Golden flax meal, 1 tsp baking powder, 1/2 TBS coconut flour, 1 TBS coconut flakes(optional), 1 TBS 85% dark chocolate chips. 1/2 TBS soft or melted butter. 1 pack truvia, 1 TSP xylitol, 1 TSP chopped pecans (optional) Mix all together well with a fork, microwave 1 minute, let sit for 5 minutes & enjoy.
