I used only 2 large sweet potatoes and there was too much oil, so I can cut the recipe back next time. I'll definitely make these again. Easy to prep the day before, stack them in the muffin tin, put them in the fridge - pop them in the oven the next day. Mod's: used dried rosemary, didn't add salt and it didn't need it.
