York peppermint brownies! Use your favorite brownie recipe, even a mix. Pour half of mixture in pan, top with peppermint patties, then pour the other half of the brownie mix on top. Bake as directed. You could also do this with Oreos, peanut butter cups, or any of you favorites!

2 medium zucchini
2 medium butternut/summer squash
1 medium sweet yellow onion, diced
1/2-1 c. grated parmesan
1/4c. extra virgin olive oil, divided
2 cloves garlic, minced
sea salt to taste
Marinate tomatoes in balsamic vinegar for 30 minutes. Lay on a baking sheet, season with salt and pepper. Bake for 7 minutes at 350 degrees. Then top with sautéed spinach and mozzarella. Broil until cheese melts.
