Mini Pumpkin Pies Recipe! - ***tried...used a 15oz can pumpkin puree, heaping 1/4 cup brown sugar, 1/4 cup sugar, 3/4 cup canned coconut milk, 1/4 cup rice milk, 1 tbs cornstarch. Used one pie crust to make 24 mini pies and put rest in a shallow bowl. Very good.
Pumpkin Dip-Wight Watchers 15 oz can pumpkin 3/4 cup brown sugar (Splenda would work too) 1 tsp vanilla 1/8 tsp cinnamon 1/8 tsp pumpkin pie spice (or more to taste) 6 oz fat free Greek yogurt (I used Chiobani) 8 oz cool whip free cut up apples to dip (extra points)
