I decided to create a fried hybrid—a frybrid, if you will—of two of my favorite mozzarella-based appetizers: caprese salad and mozzarella sticks. The resulting Fried Caprese Bombs consist of mozzarella-filled mini tomatoes that are breadcrumbed, fried, and served with a balsamic reduction. Crispy outside, gooey inside, and slightly sweet, this is one appetizer you have to try.

Weight Watchers Friendly Recipes: Southwestern Egg Rolls | 2 C frozen corn (thawed), 1 (15 oz) can black beans, (drained & rinsed), 2 C reduced fat shredded Mexican cheese blend (I used Weight Watchers brand), 1 (10 oz) package frozen chopped spinach, (thawed & squeezed dry), 4 scallions/aka green onions (chopped), 1 (4 oz) can of green chiles, (drained), 1 tsp. ground cumin, ½ tsp. chili powder, 1 tsp. salt, ½ tsp. black pepper, ¼ tsp. cayenne pepper, 24 egg roll wrappers (whole pkg.) -- Preheat 425F. Lightly mist two baking sheets w/Pam. Set aside. 2. In lg bowl, combine all ingred. well, except wrappers. 3. Pour water into sm. dish. On flat surface, place wrapper, corner facing toward you (like a diamond) & put ¼ C of mix on center wrapper. Spread mix in a horizontal line from the left corner to the right corner of the wonton wrapper, leaving ½" or so of space on each side. Fold bottom corner closest to you up over the ingredients and give it a 90 degree roll. Fold side corners in and tuck them as you give the filled section another 90 degree roll. Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper. Finish rolling the filled egg roll over the wet corner so that it adheres. Place wrapped egg roll onto the prepared baking sheet. Repeat w/ remaining ingred. 4. When all of the egg rolls are wrapped and on the baking sheets, lightly mist the tops w/Pam. Bake 14-15 min., flipping once halfway through, until wrappers are golden brown. Serve with salsa for dipping.Yields 24 egg rolls.

Cheesy Zucchini Quinoa. SUPER easy. I didn't have zucchini so I subbed in peas. The quinoa was creamy and gooey from the cheese, it just soaked it up. Great mac and cheese type side dish. Even took leftovers to work for a meal.
Cheesy Zucchini Quinoa- Servings: makes 4 servings Total Time: 20 minutes Ingredients 1 cup quinoa, well rinsed 1 3/4 cups vegetable broth or water 1 medium zucchini, grated 1 cup cheddar, shredded salt and pepper to taste Bring the quinoa and broth to a boil over medium heat, reduce the heat and simmer covered until the broth has been absorbed and the quinoa is tender,about 15-20 minutes. Remove from heat am mix in the zucchini, cheese, salt and pepper.

Fried (Baked) Pickles Prep Time: 15 min Cook Time: 7-10 min Serves: 1 selfish fried pickle lover or 4 picky eaters Ingredients: 3 Large Kosher Dill Wholes 3 Eggs 3 TBLs Milk 1 cup Flour (All Purpose) 1/2 cup Bread Crumbs 1/4 cup Panko Crumbs 1/2 cup Cheddar Cheese (Finely Shredded) Prep & Cooking Directions - Preheat the oven to 425 degrees. Slice your Dills into “chips” about 1/4 inch in thickness. Take 3 small mixing bowls and put the flour in 1, the eggs and milk in the second(and beat them together), and combine the bread crumbs, panko crumbs, and the shredded cheese in the third bowl.
