Spinach Quiche Cups...fast-make-ahead breakfast. I don't care for breakfast all that often but these look amazing! Make Ahead Breakfast, Breakfast Muffins, Idea, Mushrooms Quiches, Mini Quiches, Quiche Cups, Spinach Quiches, Food Drink, Quiches Cups
Egg Spinach Quiche Cups:10 ozs. frozen chopped spinach, 3/4 cup egg whts, 3/4 cup shredded fat free cheese, 1/4 cup red bell pepper, chopped 1/4 cup onion, chopped fine hot sauce (optional) Microwave the spinach on high 2 1/2 mins. Drain completely. Line a 12 cup muffin tray w/foil baking cups. Spray the cups w/cooking spray. Combine the egg whts, cheese, mushrooms, spinach & onions in a bowl. Add hot pepper 2 taste. Divide evenly among the cups. Bake at 350, 25mins. Makes 12 muffins 75 cal ea.
