Christmas Snowball Cookies: 1 cup butter softened; 1 cup powdered sugar (plus more for topping); 1-1/2 tsp. vanilla; 2-1/4 cups all-purpose flour; 1 cup chopped pecans; 3/4 tsp. salt; Heat oven to 350 . Mix butter, powdered sugar & vanilla. Stir in flour, nuts & salt until dough holds together. Shape into 1" balls. Place about 1" apart on ungreased cookie sheets. Bake for 17 to 20 minutes or until set. Roll in powdered sugar while warm. Cool. Roll in powdered sugar again.
