      Who needs French fries when you've got Italian fries? A twist on a recipe created by Lucinda's Italian relatives, these oven-baked fries are tossed in olive oil, grated cheese, and a medley of dried herbs. Sprinkle them with salt and pepper while they're still hot, and serve immediately. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

    Oven Roasted Butternut Squash Oven Roasted Butternut Squash INGREDIENTS 1 medium to large butternut squash 3-4 T evoo Generous sprinkle of salt and pepper 1/4 cup water Preheat the oven to 375F Cut the squash in half and scoop out the seeds. To make rolls: Cucumber- 1 (Persian with more seeds the better) I have used the regular ones.I got 12 slices with seeds seen in the middle. I patted dry the remaining end pieces thoroughly with a paper napkin, chopped it finely and added to the filling. Cream cheese -1 tbsp Wash and cut off the ends of the cucumber. Slice the cucumber in a mandolin/ veg peeler (or if small cucumber is used then a potato peeler should work) into thin long strips. Pat the strips dry with a paper towel and put 3/4 th tsp of filling on each strip and little bit cream cheese on the end of it . Roll the cucumber and press gently so the cream cheese glues the end and lay the roll flat. If you plan to keep the roll upright then use a toothpick at the seam to secure it well.(I have not used here) Note: If u like roasted beet feel free to use that instead cooking on stove top. Do not roll too tightly as the filling will squeeze out.

    Easy Roasted Vegetables... vegetables of your choice olive oil kosher salt pepper - garlic salt can be substituted for kosher salt Instructions Preheat oven to 400. Wash, cut, prepare vegetable and arrange on baking sheet. Drizzle olive oil over prepared vegetable. Sprinkle with kosher salt and pepper. Roll vegetable in oil, salt and pepper until well coated. Bake for 15-20 minutes- at the halfway mark, flip and stir vegetables to ensure even roasting.

Olive oil DIRECTIONS-> After cooking bacon drain and set aside. Chop onions and caramelize in Olive oil. Chop cabbage and add to onions, cover and let cook down a bit. Add Ranch mix and bacon and continue to cook down to desired doneness...I cook mine way down. Enjoy!

    1/4 cup butter, melted 1 large egg 2 t chipotle seasoning 1/2 t salt 1/2 t black pepper 2 T all-purpose flour 1 med-lg sweet potato, peeled and grated (3 cups) 1 lg or 2 sm zucchini (2 cups) Directions: Preheat oven to 375F. Line a cookie sheet with foil and spray with cooking spray. Melt butter in microwave. Add egg and combine. Add seasoning and stir. Add flour and stir. Add grated veggies and toss to combine. Mixture will be loose and a bit soggy. Using a 1/2-cup measure place heaping half-cups on baking trays about 4-inches in diameter and about 1-inch high, mounded loosely. Bake for 10 minutes at 375F. Push juices back onto fritters using a spatula. Lower temperature to 350F and bake for 15 minutes. Carefully flip over (they will be soft and delicate; use two spatulas) Bake for 15 more minutes. Fritters will be soft. Allow to cool and firm up for 10 minutes before serving.
