Many late night, post-night-club breakfasts in Houston feature Migas - basically just scrambled eggs, tomatoes, chopped soft corn tortillas, onions and whatever else you have in the fridge. Cooked potatoes are good. It's what I love about Tex-Mex cooking - you use what you have on hand. I add sausage, ham, brisket or bacon, usually some kind of cheese, and then top with salsa on the plate. Serve hot soft corn tortillas on the side to make your own breakfast burritos. Quick. Easy. And so good.
