Drain most fat; add brown sugar, soy sauce, ginger, salt, pepper and red peppers. Simmer a few minutes blending flavors. Serve on steamed rice top w/ grn onions.

I manage The Jungle House vacation rental in Santa Teresa Costa Rica. Living by the beach is awesome because I get delicious fresh fish delivered to me. My favorite is whole red snapper. Here is a great tropical fish recipe: Pat down fish, sprinkle on sea salt & a little curry powder. Coat the pan with a thin layer of coconut oil. Get it hot. Throw on the fish and turn it to low. Add diced carrots, onions, and ginger. Cook fish 8 minutes/side. Plate it, squeeze half a lime on it, and enjoy!

The Best Marinade in Existence.....Ingredients 1/3 cup soy sauce 1/2cup olive oil 1/3 cup fresh lemon juice 1/4 cup Worcestershire sauce 11/2 tablespoons garlic powder 3 tablespoons dried basil 1 teaspoonground pepper: Used this with pork chops and it was awesome. Makes aton - Probably enough for 8-10 chops.
