A gluten free recipe.                                      190g buckwheat, 95g ground almonds, 1 tsp baking powder, 1 tsp bicarbonate of soda, 1 tsp cinnamon, 1/4 tsp cardamom, pinch salt, 200g pineapple, puréed, 170ml oil, 200g soft light brown sugar, 80g honey/agave, 3 eggs, 1/2 tsp almond extract.                                        Lovely, soft, moist cupcake, buttercream and choc chips on top make them even more delicious!

DIY: Cup for cup, make your own Gluten Free Flour Mix!  1 C each of white rice flour, coconut flour, oat flour, and tapioca flour/starch, 1/4 C cornstarch, and 3.5 tsp xantham gum.
