Blueberry Coconut Pecan Breakfast Cookies [recipe, gluten and sugar free] I played with this recipe a lot because it calls for 3(!!) mashed bananas, and I don't, erm *love* bananas. Still a great idea, but I've taken the bananas out, added applesauce, maple syrup, almond flour, and xylitol. Not this recipe, by a long shot, but a good inspiration!
I've been making these for a while but have rolled them into little balls. They keep FOREVER in the fridge & just shy of forever on the shelf. Can also do with almond butter for another protein boost.
