Delicious gluten-free oatmeal cookies--eureka, I have found the magic recipe! Making fresh flour out of about half the oats was so easy, and it really helped the texture. I shy away from GF recipes that call for three different flours + xanthan gum. No thanks, too lazy! I subbed coconut oil for butter, added finely chopped walnuts, stuck with the cinnamon and chocolate chips, and doubled up the vanilla. These were gone in a few hours.
