*Absolutely the best gluten free pancake recipe I have ever tried. *I have made these twice now and I followed the recipe almost exactly (didn't have stevia on hand) *I also discovered through my own airheadedness that if you forget to put in the coconut oil and cinnamon, the cakes will still cook up nice and fluffy (in a non-stick skillet) and you'll end up with a cake that's not quite as sweet and almost bread-like. * I made a double batch and froze for quick weekday breakfasts.
I tried this pancake recipe today and it was ok. I wouldn't say it makes fluffy pancakes. Mine were certainly not like the picture, but I know my baking powder is at least 7 months old, so that might have been the problem. I did add a teaspoon of vanilla as I normally do. The recipe made 3 6-7 inch pancakes which was the perfect amount. I will try the recipe again with fresh baking powder.

Cinnamon Rolls are my favorite dessert bread. I like this recipe because I can easily make it gluten free AND I can make one giant cinnamon roll and be done. Then I eat just one. And it's fresh and soft.
