Chopped Southwestern Black Bean and Corn Mason Jar Salads

Sweet Corn & Black Bean Salad 2 cups black beans, rinsed and drained 1 cup frozen sweet corn, thawed 1/2 cup grape tomatoes, roughly chopped 1/2 cup chopped bell peppers 1/4 cup finely chopped red onion 1 large handful fresh cilantro, chopped 1 tbsp olive oil 2-3 tbsp freshly squeezed lime juice (about half a lime)

    @Judy Casper Wide Mouth Quart Jars (32 OZ) are ideal- If you get anything smaller the ingredients would not all fit. The widemouth jars make for easier layering when making them and better to eat out of :)

    I have made them with avocado and because it is at the top it does stay fresh. I left it in the fridge about 4 days and they were still good.
