4 cloves Garlic
1 Onion, fine
1 lb Spinach, frozen

Pasta & Grains

5 cups Quinoa, cooked

Baking & Spices

1/4 tsp Pepper, fresh ground
2 tbsp Quinoa flour
1/4 tsp Red pepper
1 tsp Sea salt

Oils & Vinegars

1 tbsp Olive oil, extra virgin

Dairy

2 cups Milk, unsweetened
2 oz Parmigiano-reggiano
6 oz Ricotta cheese or vegan ricotta

Other

8 ounces mozzarella, shredded or Daiya Shreds

    Quinoa Florentine. Easy, good and naturally gluten free. Next time I will use a little less quinoa or 1/2 the recipe.
