Oatmeal Cranberry Cookies -- Studding chewy oatmeal cookies with cranberries gives them a bit of bright color and a slight tang. Any dried fruit can be substituted. I make these all the time! Today I added a bag of white chocolate chips. :)
The grain in this recipe is primarily oats, so it's easily converted to a GF recipe if you are able to tolerate GF certified oats. For the added flour, I used about cup of sweet sorghum flour, but truly nearly any GF flour will likely work.
