      Apricot Chicken Salad Recipe: 6 cooked, shredded chicken breasts ½ C chopped celery ½ C chopped green onions ½ C sliced, toasted almonds ½ C mayonnaise 1 C apricot preserves Mix all ingredients and refrigerate until time to serve. Serve with bread, rolls or crackers. *For curried chicken salad, add 1 ½ T curry powder and ½ C dried cranberries.
