Creamy Caprese Quinoa Bake

Creamy Caprese Quinoa Bake...2 c cooked quinoa 1 c of your favorite pasta sauce 2 tb tomato paste 1/3 c heavy cream 1/3 c parmesan cheese 1 c mozzarella, divided 1/2-1 c grape tomatoes, halved 1 lg bunch fresh basil, cut into ribbons 1/2 tsp crushed red pepper 1/4 tsp salt 1/4 tsp pepper 350 degrees F Bake 10-15 minutes until cheese is melted

Cook ground beef with taco seasoning. Add 4 oz cream cheese. Blend well. Set aside and allow to fully cool. Cook the pasta shells. Pour salsa in the bottom of a 9x13 baking dish. Stuff each shell with the meat mixture. Bake at 350 degrees for 30 minutes. Sprinkle crushed chips and shredded cheese on top. Cook for about 15 more minutes.

Again, a healthier (no-meat) version of a pasta dish: lasagna with butternut squash!  I would skip the Parmesan cheese and just put in the Gouda.  Pair with pumpernickel toast and a salad?  YUM.
