Zucchini Quinoa Burgers - vegan and gluten free. I double the quantities of zucchini and quinoa, used 3 T Dijon, subbed sunflower seeds for pumpkin seeds. This made 9 1/2-cup burgers. The non-veg's loved them too!

Pesto Pasta with Sun Dried Tomatoes and Roasted Asparagus - Really easy! I used jarred pesto and didn't serve it with an egg on top (although Adam made an egg for his and said it was tasty). Some kids didn't like the asparagus and some didn't like the tomatoes, but overall they ate it well. I'd make it again.
