I love this idea! Set up a Black Bean Bar for the family or friends. Just cooked and seasoned black beans, then set out dishes of onion, cilantro, peppers, sour cream, cheese, bacon, cooked carrots, smoked sausage, ham... oh, I can think of lots of stuff. Heck, you could cook the beans all day in the slo-cooker and serve from that.
simple kale/black bean burritos- fresh lime juice, olive oil, cumin, chili powder, sea salt, 1/2 tsp seeded and finely chopped fresh jalapeño, 1 TBS cilantro, roughly chopped, 2 medium leaves of kale, stems removed and chopped into bite-sized pieces, 1 garlic clove, 1/2 C cooked or canned black beans, 1 small (8 inch) whole wheat tortilla,1/2 small avocado,1 TBS chopped red onion,1 to 2 TBS crumbled feta cheese, Sour cream or plain Greek yogurt to serve on the side
