      Quinoa, Egg & Veggie Breakfast Bites - these are tasty and can be frozen and reheated for later. Now to get the egg reside off of my muffin pan....they came out ok after running a knife around the edge, but there is still a fair amount of residue around each cup.

      Quinoa Veggie Muffins. 1 c cooked quinoa, 4 large eggs, beaten, 1/2 c finely chopped yellow onion, 1/2 c finely chopped red bell pepper, 1/2 c finely chopped kale, 1-2 t coconut oil or olive oil, Salt & pepper to taste. Cook, combine, bake for 10 min at 350°. Grease a 24 mini muffin tin with coconut or olive oil (you’ll want to grease them well but not excessively) .

      Quinoa, Egg, and Veggie Breakfast Bites. I omitted the peppers, changed the kale to spinach, and included bacon and cheese.
