This is the best and most awesome breakfast cookie ever! And the best part, no flour, no sugar, and no dairy added! Ingredients- 1.5 cups of oats 2-3 super rippened bananas 1 cup of unsweetened applesauce handful of craisins to taste cinnamon Pretty much just throw everything together, mix it up pretty well, throw it on a baking sheet at 350 for about 35 minutes and then go to town! It's great and super healthy for you!
Breakfast cookie / I use this recipe for a base and add or sub dried fruit for blueberries i.e. dried cranberries... also add chia seeds for omega 3s and protein as well as a 1/4 cup peanut butter. I spread them in a 9x11 baking dish and cut up as bars.... fabulous!
HEALTHY BREAKFAST COOKIES 3 mashed bananas 1/3 cup apple sauce 2 cups uncooked quick-cooking oats 1/4 cup skim milk 1/2 cup craisins 1/3 cup pecans, chopped 1/3 cup sunflower seeds 1 tsp vanilla 1 T cinnamon 1 T sugar Mix all ingredients together. Spoon the dough by teaspoonful onto a greased cookie sheet. Bake at 350 for 15 minutes. Cool and serve. Leftovers can be frozen.

Serves 6-8 ? cup unsalted butter room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 3/4 cup 2 tablespoons 1 tablespoon sugar 1 egg room temperature 1 tsp. vanilla 2 cups flour (set aside 1/4 cup of this to toss with the blueberries) 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ? cup buttermilk.
