Paula Deen's Cheesy Enchilada Soup - made this and it was fabulous! Like eat enchiladas in a bowl! I used shredded Colby jack instead of pepper jack so it wasn't too spicy for my 5 year old. She ate three bowls of it as did my hubby!
Smoky Corn Chowder with Shrimp. 2 slices bacon, 1/2 lb shrimp, 1/2 onion, 2 clove garlic, 1 T paprika,1 pinch crushed red pepper, 3 ears fresh corn, 2 c chicken stock, 1/2 c cream. Heat pot. Cook bacon and sear shrimp separately. Heat a pot, add onions and sauté. Add garlic, paprika, red pepper, salt and pepper. Sauté. Add corn and toss. Add stock and cream. Ladle soup into a blender and pulse until creamy. Pour back into the pot and stir to combine.Serve chowder with shrimp and bacon.
Chicken Cordon Bleu Soup - the base recipe I used. But after adding the cheese, it was far too thick, I added the rest of the quart of half and half AND a can of chicken broth. Also added rotisserie seasoning since I used cooked chicken breast.
